No, not using Mobil 1 is not a concern. Factory oil was semi-synthetic, and that's probably what's in there. Regular oil changes are more important than whether or not synthetic is used.
ACC and manual climate control systems both use a heater core, and I've never heard of one going out on these cars. The problem with the manual system is that the rods that connect the knobs and the controls behind the dashboard can get stiff and break something in older cars. If yours are stiff, then have the dealer check it out. Otherwise, don't worry about it.
The 9-3 doesn't have the idler problems that the NG900 does. With so few miles your single idler pulley should be just fine, anyway. They don't tend to go out before 40,000 to 50,000 miles.
Yes, the steering is rubbery. It's because the rack is mounted high on the firewall and sits in large rubber bushings. You can buy a solid aluminum clamp and brace from Taliaferro Saab that will do wonders for the steering feel.
Changing the oil is a piece of cake. The filter is in plain sight under the car and sits horizontally, the best position for minimizing mess. Changing everything else you've listed is also pretty easy, except for the alternator, but fortunately they're pretty reliable. They're made by Bosch, who probably also made the one in your Land Rover. Changing the battery doesn't mess up a thing.
Changing the brake fluid takes less than an hour all by yourself if you have a Motive Products pressure bleeder. Otherwise it's about the same as it is on any other car.
No, the headliner won't fall down. That was a problem on the classic 900, but it was fixed on the NG900 and the 9-3.
Unless your hills are covered in snow, the Saab will outdo your Land Rover and a Subaru, and it will be a lot more fun with its turbocharger!
