I just experienced this with an Opel Astra I was driving in Australia. Engage the sport button in the Astra and you're locked out top/4th gear, hence increase fuel consumption. This kind of programming was also true for BMW's early on. The Saab sport programming does not lock you out of top, so fuel economy on the highway should be identical. Around town a different thottle engagement ratio and higher upshifts doesn't necessarily induce worse fuel economy, it's more a function of your driving style and aggressive acceleration up to cruising speed is actually more fuel effecient technically. So engagine sport, all by itself, doesn't decrease fuel economy, you could get just the same fuel economy in sport as normal mode. It's not really about the economy though, you'll be so much more satisfied with the feel of the car in sport you'll drive harder and get use more gas.
The turbo boost drops because you are getting less engine throttle in normal at the same level of pedal push. Sport increases the throttle plate opening for a give amount of pedal push. Sport also increase the RPMs before the tranny shifts, and facilitates much easier engaged part throttle down shifts. My tranny downshifts when I engage sport, that's how I know I forgot to select sport, I don't get the downshift for a given amount of push.
