How to paint a bumper cover?

An errant pick-up truck crunched the side of the front bumper cover on my Cayenne Red '98 900 SE and his insurance will replace it. What paint sequence, number of coats, etc. should I ask the body shop to do? I need to get three prices, so I want to make sure I'm comparing the same quality of work. Helpful hints and suggestions would be very welcome! Thanks.
