With exception of the timing belt design, I think the 2.5 is a descent engine. I have a '94 900SE V6 that has done 194,000 miles and just keeps going. It's got plenty of torque, gets 28 to 32 mpg on the highway and always starts. I've never had problems with the head gaskets failing and the timing belt is a driveway change as opposed to the timing chain in my 2.3 which requires engine removal to overhaul.
That being said, when the V6 in my '94 finally dies, I am going to pull it out and install the newer 3.0 or 3.2 used in the Cadillac Caterra/SAAB 9-5 or the Saturn variety. These utilize the same block and have a redesigned timing setup. You can pick one up used for under $1000. If I were you, I would take this route, as it's always a shame to scrap a car with a good body for something so simple!
