I did exactly the same thing to my 00 9-3 about four years ago when the car had 60k on it. My engine looked the same as yours internally as far as the oil stain color, my bolts were not loose either and I had no signs of gasket leakage. I too had to cheat and use a little bit of gasket sealer on the valve cover side to keep it in place. Oddly I did my 94 900 SE aweek week prior to that (not the headbolts, just the leaky valve cover) and it had a different channel for the gasket which held the gasket in place with no sealer. So my experience was the same as yours. I wouldnt worry about the slight over stretching of the new bolts.
The results four years and 70 k later are no leaks and the original headgasket is holding up fine. I think you can look forward to the same results. I can say it was worth doing.
One thing you should have done while you were in there is to replace the distributor plug/seal. it is shown in your picture# 7. Mine was leaking at 60k which prompted me to do this job in the first place (MY 94 WAS LEAKING TOO). You need to get a tamper resistant torx tool to loosen those two screws that holds the plug in place (NAPA has the tool for around five dollars). The plug with the rubber seal was ten dollars from Saab. Keep an eye on this area for future leakage.
Other than that it sounds like a job well done.
Now I have to rip my dash panel out to replace the wood fascia that is cracking and lifing off. 100 degrees outside and humid tells me this job can wait a bit. My bottom seat panel drivers side is falling apart and I need to fix it as well.
