It depends upon how industrious you are and the damage. It sounds like you got a really good evaluation from the insurance company. I might be inclined to call it a day and buy something "new."
But...
If you are mechanically inclined and willing to spend some time, one option would be to buy it back and part it out. I would check e-bay to see what parts are selling for to see if that is an option. In the winter time after the snow falls you will start to see people really looking for body parts, lights and the like.
You could also troll for a used car of similar vintage that needs what your car has and you could transfer parts and sell the rest.
I had a '95 convertible that I tore down to the body and a guy on Craig's was more than happy to come and get the body for scrap. didn't even have the wheels on it. Just pulled it up onto his flat bed. It had a bad V6 and I probably made $700 over what I paid for it. Broke even if you put in the labor.
My "new" '95 convertible had a slow speed rear end hit and I paid $500 for it. Engine runs great but it rattles like hell over bumps.
If you think you would ever sell it in the future and it has a salvage title...you'll most likely lose whatever money you save by rebuilding it. If you run your cars into the ground then it "might" be worth rebuilding.
Really, it depends upon your aptitude, how perfect of a car you like to drive, and the time you have available before you need a car again.
