Pretty sure there are two temperature sensors, one for the dash and another for the cooling fan relay. Maybe even a 3rd for the ECU. But even if the cooling fan didn't come on, I think it would take a bit of work to blow a head gasket or warp the heads in your current climate since the thermostat would be sending coolant through the radiator and you would be driving around, so the engine would still get some cooling action. You would have to be in a really hot climate or let it sit and idle for a long time before it would overheat that far. But I think before then, the coolant would boil and you'd probably blow a hose off or get coolant blowing out the expansion tank. So I think you only have a blown head gasket. But other low compression possibilities would be piston/ring/cylinder wall issues or a burnt or bent valve. But those usually cause major problems and noises pretty fast, so if you've been driving for a while and haven't noticed anything beyond coolant loss and the cold start, then hopefully they can just replace the head gasket and be done.
Turning the engine over and over shouldn't allow any pressure to build per se, since the valves open and let everything out in between cycles. I think it does depend on how low the compression is. Less than 100 for example might be too low for that cyclinder to ever fire. 125 might be enough to keep things looking normal, while 150 and up I think are approching normal readings.
