Are you sure you were reading the correct sensor? Could you have been mistaken about what temp you were looking at?
Seems to me that the engine temp gauge would have shown an increase of that sort... unless you have both a defective gauge and a cooling problem all at the same time. Odds are against that (although the temp sensors in these are known to go and read cold)
