It sounds like the alternator goes bad when hot and might come back to life when cold again.

If every time the car dies, the battery voltage is low and not enough to crank over the engine, it means the alternator has not been able to charge the battery while driving.

So that's one of the tests the shop has to do.
Check the battery voltage and if low, charge the battery and check voltage again and then start the engine and check battery voltage when running.
If the running voltage is lower than the engine off voltage which it sounds like with the 11 number you wrote, the alternator is not putting out.
Next is to make sure both the negative and positive battery cables are ok and not partially broken/corroded somewhere.

Since it sounds like that you can drive quite a bit of distance, 5 hours, even after a recharge, the alternator cannot be completely dead since you would only get a few miles after a quick recharge or jumpstart like it happened a few times.

A fresh fully charged battery would be able to carry you maybe a few hundred miles even with a dead alternator but I don't think it would be able to do 5 hours at night using defroster and wipers so that makes me believe the alternator comes and goes and maybe only start to fail after a long continues drive since your mechanic couldn't find anything wrong with it the first time he looked.
