The object of the exercise is to match the rpm of the transmission input shaft and the gear you want to select.
Double clutching when upshifting on big trucks was necessary because a) there are no synchros, and b) the clutch and gears are very big and inertia keeps them spinning. When you shift a synchro transmission the resistance you feel when pushing the lever into gear is the synchros either spinning up or slowing down the input side of the trans to match the gear you select.
As was said in another post double clutching on upshifts is really unnecessary on a synchronized transmission. The parts are not heavy enough to make shifting difficult. When upshifting in trucks or other non synchro trannies you depress the clutch, move the shift to neutral, release and depress the clutch to slow down the input shaft then select the next gear.
On downshifts double clutching can reduce wear in the synchros and allow you to shift into a lower gear faster. to do this you depress the clutch, move the shift to neutral, release the clutch, rev the engine, depress the clutch and select the next lower gear.
This sounds cumbersome, but after a while you don't even realize you're doing it like I sometimes find myself doing on upshifts
