If you have air bubbles in the system, it might take a while to get the last little bit pushed out of the system. Especially since the NG/9-3 do not have a coolant bleed nipple to help remove trapped air.
Also, it couold be highly localized boiling of the water in the coolant. As the coolant is circulated it comes across a hot spot in the engine. Some molecules absorb enough heat to vaporize. As they pass through the radiator these molecules remain a gas and eventually leave the system. I'm not saying this is what happened, I just this could happen.
I've had this occur to me. I usually just fill it up and check it in a couple of weeks. So far not problems.
