Stalling and Alternator Question, please Help!

Please bear with me, a first time poster here, I hope I'm not going over old ground.
Just developed a problem with my wifes 96 S V6. While driving to a dealer (to get the brake caliper rattle problem resolved, thanks for the info!) the car stalled at about 30mph, it seems the alternator light came on just before it stalled. Of course she reported this to the dealer, who looked at the alternator / battery system and recommended the alternator be replaced. She decided not to have it done and brought the car back home, it seems to be running fine, and when fired up the alternator light does not come on. The dealer reports 12.1v as a measured output from the regulator.
Occasionally the car has been "hunting" for the correct idle rpm while idling, usually while warm it the revs will drop to about 800, feel like it is about to stall, and then race to 1500, repeat until the throttle is applied. Again the dealer states that this is part of the alternator problem.
I'm curious, why have I not got an alternator light on (it's working), if I have low alternator output, does anyone know at what voltage the light is triggered? Also, how come the car hasn't died yet, if the battery is only getting 12.1v of charge (this problem has been happening for a month), why hasn't the battery died.
Does this sound like a reasonable solution? Or am I being taken for a ride?
