Head Gasket, New Mystery [long]

I posted last week about having oil in the coolant. Sounds like a headgasket, so I d/led the new procedure and retorqued it the head. But weird things popped up:
Everything under the valve cover was shiny and sludge-free. The chain sprockets had no wear that I could see...and no coolant. Plugs still look great. (Anyone who's wondering, the head bolts are External Torx E-16; nice touch, you can't strip them.)
I still have to do a flush on the cooling system, but the real kicker was the gallon of coolant I siphoned off to do the thermostat last week. I left it in an empty washer fluid container (which I'd rinsed).
In a week, it had settled into three distinct strata: on the bottom, about a cm of very light brown sludge then a .5 cm layer of stark white, then coolant. No oil on top. No slick, no balls of oil. Just this strange stuff, on the bottom.
I've never added anything in there, although I haven't changed the coolant since I started DIYing everything. Maybe it's radiator stop leak/bar's leaks somebody else added? Could that do this to old coolant? I'd hate to think I disturbed the head on (an admittedly logical) hunch...
