The oil pan gasket is a pain in the butt on the four cylinder engines because you have to remove the catalytic converter and lift the engine slightly with a hoist to get it to clear the subframe. I'm told it's a lot easier on the V6 since nothing is in the way of the oil pan (check to be sure). Thus, it's a matter of draining the oil, removing about 18 bolts, applying a new gasket with sealant, and torqueing the bolts back on. (You have a torque wrench right? Or borrow one)
As for the valve cover gaskets. That's a MUCH easier job on the four cylinder engines but more difficult on the V6 since there are two of them. Once again, I've done this on a four cylinder engine but have no experience with the V6. There might be more "plumbing" in the way...
The NG900 Haynes manual is good to have for repairs like this but unfortunately they don't cover anything specific to the V6 engine. You might try subscribing to the AllData service (http://www.alldatadiy.com) and they should have the V6 information so you can decide if this is something you can tackle.
