Just like not all motor oils are the same, not all anti-freeze/coolants or all power steering fluids are the same.
As far as coolant goes, Saab uses a pretty standard ethylene-glycol coolant. It is Phosphate free and has a bittering agent to discourage animals from drinking it and poisoning themselves. Using Prestone coolant, or any other brand, should be fine as long as the cooling system is flushed well before switching coolants. Mixing different coolants will most likely significantly decrease the anti-corrosion properties of the coolant.
Power steering fluid is another issue. Saab used a standard GM power steering fluid until about 1998. In the 1998 models Saab switched to a synthetic hydraulic fluid, Pentosin CHF 11S. The Pentosin fluid in not compatible with the GM fluid, so mixing the two is not a good idea. I would suspect that leaking seals and possibly steering rack failure could result. At a minimum, the viscousity characteristics of the fluid will be greatly changed.
