Accellerator 'like a switch'

My 1995 SET (120k miles) is behaving strange.
The accellerator feels very digital, or jerky, i.e when you press it its like switching on the power, and the reverse when you lift off. Cable is OK, throttle butterfly is not sticking. I've replaced TPS (even though ECU didn't report it as faulty) New plugs, replaced all vac lines. none has fixed it. DI cartridge is a year old.
Also when accellerating and decellerating the car is jerky/fluctuating. I can hear this beacuse the timing chain is rattly when there is no load, but changes when the engine 'pulls' so the resulting sound reveals the irratic decelleration. I do notice a kind of graunchy sound just as the fuel pump finishes perssurising the system after ignition switch-on. is this a clue? However, when you floor it, the fuel is there on demand (i.e no loss of power or max speed reduction) Any ideas!!
