You could clean the IAC, no harm there. Use carb cleaner and then oil it before installing.
Injectors that are fouled will have problems at starting and will still produce power at full throttle. At full throttle there is a lot more mixing with large air flows and fast velocities compared to cranking conditions.

Why are you removing the ECU from the wiring harness???
The ECU will detect major faults with the intake air sensor. It will be around 2K ohms when cold.
There is no air flow meter, just a manifold absolute pressure sensor (MAP). The map sensor plus temperature sensor maps air density and and the rpm maps volume, its called a speed/density system. If the map or temp sensor were bogus, the system would not be able to control the density. There would be an adaption fault as the ECU would not be able to keep the 02 sensor signal in range. Any minor deviations of the temp or map sensors from a norm, will be taken care of during adaption and things would be fine from there.
