I replaced the vinyl door trim on two different cars so I have plenty of experience with this... Tips:

Do it on a HOT day... If you try to peel the vinyl off in cool weather it will be VERY brittle and break off in tiny pieces (and it will take longer to remove). Park the car in the sun on a hot day and it's MUCH easier.

Clean up the excess adhesive with "3M Adhesive Tar & Wax Remover" available in a little black can in the automotive paint section of any WalMart.

To make life easier and to get the adhesive out of all the crevices, pull back the weatherstrippping around the windows. Be careful not to kink the top or bottom strips that are reinforced with metal inside (you'll see what I mean)

There is PERFECT paint (with clearcoat too) under the vinyl... If you want you can just leave it that way, but it can be prone to scratches from keys, rings, etc, plus it shows fingerprints (which is the reason for the vinyl cover)

New vinyl covers are available at the dealer for around $8... There's no readily available substitute and the new covers are pre-cut which makes it easier.

When applying the new covers, make sure you line it up right. You only have ONE shot to get it on straight since the adhesive is very sticky and peeling it back can stretch the vinyl out of shape. Leave the backing on most of it and start from the top smoothing out air bubbles as you go...

It's really not as hard as it seems from reading all this... It's just time consuming to get a good result. If you leave the bare paint then you only have to do half the job...
