While not coming at this from a Saab angle, I have some of the same feelings with my everyday car progressing from a 78 Rabbit to a 92 Mazda 323SE to, as of this summer, an 00 9-3. It's taken a while to get used to all the doodadery, but I do really like it.
I considered a WRX wagonette, a Mini Cooper S or even a PT Cruiser Turbo. (No way the Mini is a "girl car" -- not that I think that means anything nohow.) But all are new models and I got a lot of car for my buck with the used 9-3.
And I thought I'd see what a bigger car was like; still seems huge to me. How much of your disquiet is perhaps simply around the 9-3 being a larger car?
Maybe you need a second, fun car that you drive except when you need what the 9-3 offers? Something older would give you more of the simplicity back.
