Two cars can be a good idea, but besides insurance make sure you can handle misc. repairs that come up. I have four cars, three of which are on the road and trust me it's not cheap. Two of them have over 200,000 miles and the "limited use" car is holding at 49,888. Trust me, I'm insane about my cars and have had at least two since 1991 so I would never talk anyone out of more than one, especially two Saabs!
As for insurance, try to go through a reputable broker if possible. They have more resources than the typical agent. I have a friend who's an agent and deals with a few companies at once and gets the best quote. On top of that if your agent is good you can utilize them as a liason to the insurance co.
