I think the "new" iBooks are really just repackaged powerbooks - compare the freature set between 12" power- and i- and you'll see what I mean. I only chose powserbook this fall because at that time the ibook only came w/ G3 processor - figured that was just too much of a throwback.
I didn't order applecare - i figured that the 1 year warranty would be enough.
Have three suggestions:
(1) buy as much memory as you possibly can - that seems to be the necessary lubricant for OSX to work properly. The 256MB I have in the powerbook (867MHz) seems to be just enough - when I have the cash I'm going to buy more (thinking about 1GB if possible).
(2) get to know the command line interface. It makes many things much much easier - especially if you do just a little bit of coding.
(3) when you get comfortable with the machine download the "fink project" from sourceforge (link below). Its a project that ports all sorts of Linux sopftware to the OSX platform. There's a nioce browser, "FinkCommander" that makes installation easy. I've used this to download a bunch of free software, most notably "The Gimp", an Adobe Photoshop-like program. iPhoto blows at editing images - I use Gimp for all the image manipulation I do on the web (like the image below - spliced version of several photos).
With regard to the "scientific computing" comment that another user posted - I'm in graduate school and I do scientific computing (computational biophysics) - I use my machine in this way most every day.
