Should be able to find a decent P3 w/600-800MZ pretty cheap I'd think (probably want at least 256MB mem for a desktop setup). Want do you want to do with Linux? If you just wanna run it as a Linux server what you have should work fine for lots of things (just ensure your not firing up X). Could use it as a web/file server or a firewall/proxy perhaps. At least you have plenty of memory so you could even try a desktop installation just don't expect impressive performance or get to deflated if it doesn't work out.
