What if incentives go up? Physical delivery issues..

It goes both ways, incentives could go up, down or stay the same. In California you can sign away, but nothing is binding until you take physical delivery of the car. So signing doesn't really obligate you to anything until you actually take delivery of the car.

Why do they need your car? If you signed the paperwork they could loan your car back to you.

In general it's always a slippery slope to report a car sold before it actually is. Incentives going up is one reason, unforseen personal issues like accidents and death is another.

Like most salepeople there are incremental bonuses. At my old place the 8th car paid an extra $500. I'm sure something similar is going on with your salesperson.

So if you do sign before the end of the month you're probably just doing your salesperson a personal favor, and you don't really lock your self in.

Did you give a deposit for the order? Technically a dealer is within their rights to hold your deposit until the car is sold to someone else if for some reason you can't come through, but most don't as then you get into an escrow account issue type of a thing, meaning the dealer will likely refund your deposit immediately.
