Since there is less material touching the pavement, there is more pressure on the area that is touching the ground, which causes better grip. Probably not a whole lot, but there is definitely a difference.
I bought new steel wheels with mounted 185s Gislaved snow tires at the end of the winter last year, so this will be the first year with narrower tires for me. I always had 205 Hakkas with no problem though.
