Just remember on FRS _everyone_ is listening. FRS stands for Family Radio Service and is designed to be the "everyman's" radio. There are no licensing requirements and basically no rules except it is for private communication only and not for business communication. Companies violate this law all the time by the way and the FCC needs to crack down on them.
GRMS stands for Ground Mobile Radio Service and like another respondent said it is a licensed frequency band being abused (from a legal standpoint) by people not getting licenses. Again, it works but just be aware that you are breaking the law if you don't get licensed. It does have greater range than FRS due to the higher allowable wattages. A radio's output wattage combined with the type of antenna being used and the frequency type determines the range of the transmission. Both FRS and GMRS are Frequency Modulated (FM) in the Ultra High Frequency (UHF) ranges (I'm pretty sure GRMS is UHF) and are line of sight communications.
CB radio still exists and you can use it without a license much like FRS. The down side is there is more noise (hiss) inherent on these frequencies and the equipment is not readily available like FRS is, plus it's bigger and heavier. It is Amplitude Modulated (AM) and technically it extends beyond line of sight if you use non-traditional antennas and know what you're doing but for all intents and purposes it is line of sight for most people.
With FRS there are 16 channels and you have the ability to enable "privacy tones" which are basically sub-audible (meaning you can't hear them) tones that allow you to "hear" only transmissions from FRS radios sending out the same tone your radio is listening for. But it is not truly private because anyone can enable the same tones and hear you.
Of course you could all get your ham radio licenses and play with "real" radios :-)
