I chipped off all the old mortar and used a mortar mix about 1.5 inches up bby the flue and 1/2 inch at the edges. Seems to have held up fine so far. If I did it again I'd do it a bit thicker at the edges. I'm in NH so I have a simmilar climate.
It does depend on how high your flue comes out of the chimney. Mine doesn't come up as much as I'd like, but you work with what ya got!
