For even aggressive driving on public roads, given modern tire technology, there is no practical difference in handling from, say, a 205/55 x 16 (fill in the tire of your choice) and a 225/45 x 17 OR a 245/35 x 18 of the same make & model of tire. Yes, turn in and response will be quicker, but those are only one aspect of handling. Will they let you corner faster? Sure, but not a lot faster.
On a track, where lap times can be measured and you can drive flat out, there will be a bigger difference. But in the real world it really doesn't matter because unless one is stupid, homicidal or suicidal you don't usually reach the limit of adhesion on public roads.
