My son and I researched this before he recently bought a house that already had granite counter tops. With two small children, he wanted to be safe.
Some--but not all--granite releases radon and radiation. Some--but not all--of the levels being released are at what EPA calls cautionary levels. Cases have been documented--a few--where the granite level was high enough that it raised the radon level throughout the house.
Odds are good that your granite would be safe; odds are good that any releases would be at inconsequential levels. The only way to know for sure is to have the granite tested before you have it installed.
