Amazing place. Although it's been 15 years since I was there I'd go back in a heartbeat (although Turkey is my favorite). Most of the hotels have rooftop bars, but I recall drinking a lot of Stella (not Artois) - the local lower alcohol beer. I'm sure the western chain hotels would have full bars.
It's dirty, dusty, hot and smelly but at night the cities are magical with lots of urban atmosphere. Western women are welcome at shisha shops so be sure to pull up a chair, grab a water pipe and strike up a game of backgammon with the locals. The bazaars, museums, mosques and monuments are definitely worth the trip. And remember, the rule of thumb with most any tourist country is that if they want your money, they'll know how to speak english.
Make sure you see Cairo, Luxor, Aswan and all regional monuments. I didn't get to Alexandria or points outside of the Nile valley. I'm sure someone here has more recent experiences to elaborate on.
