We just replaced our hot water heater a month ago. The old one was 14 years old. I did it because I had gotten a very good life and am, by nature, prone to do things on a preventive basis versus reactively.
Given that you do have good water and a hot water heater that is only 8 years old I would not be in a rush to replace it yet. I would wait until you have 10-12 years on the unit.
Anodes are available in a collapsible design specifically for the low ceiling you are confronted with.
I've attached a link to an online video regarding replacement of the anode rod.
