The POA oil sounds interesting, let us know how you make out! One issue might be the compressor warrantee if you're using an oil not specified by the manufacturer. Though if you can avoid the moisture problem that sounds a real win to me. (PAG oil absorbs moisture 1,000,000 times more readily than the old mineral oil!) If you're changing the compressor and drier you would just want to flush the rest of the system out to get rid of as much old oil as possible.
Nylog is much thicker and more tenacious than compressor oil, should provide a better seal. I use Nylog Blue on R134a/PAG systems, Nylog Red on R12/mineral oil systems.
If the POA oil doesn't absorb moisture and doesn't otherwise deteriorate when exposed to air you should be OK keeping the excess, but you'd want to check with someone familiar with the stuff to be certain.
