I'm sure a detailer can do that stuff. I would definitely not get it stripped and repainted. You'll have to pay a fortune to get even halfway close to as good as the factory paint. I had part of a car painted and 2-3 years later clear coat was peeling off. What a mess! Just not the same quality control and you really can't tell for sure until it is too late.
I just touch the chips up myself. If you are fussy, you can prime, paint and clear and then polish to invisible, especially if you get a perfect paint match... I'm usually too lazy/in a rush, and glop on anything I can find that is close... though I've done doglegs etc such that they were invisible, but of course that is a bigger job anyway, so the extra work seems ok.
Definitely avoid/slow down on gravel roads (and construction sites) to keep the stone chips to a minimum...
