Performance tires will be great on cornering a road holding. They will also be less comfortable to ride on and may make considerably more noise than an all season tire. A performance tire will sacrifice ride quality for handling. Depending on the type of performance tire it might not be great in the rain. The more you spend the more you get back in terms of comfort and all around performance. They will be unable to deal with any snow or slush, and may be downright dangerous in such conditions.
An all season tire will get by in snow, but may not be great. It will give a good ride and will concentrate on that and perhaps tread wear or rain ability or puncture sealing or or or.. They will perform ok if not pushed to hard, but will not bring out the best in your sports car. The side walls are not as stiff so cornering can get unpredictable. Again the more you spend the more you get back in terms of performance.
I go with 16" performance tires in the summer and 15" dedicated snows in the winter. I got by on all seasons in a ng900, but in the last winter they were scary do drive on. good luck...
