There may be a sound reason for running it in the ground so without being more familiar with your house plan, lot, etc., I can't give valid comments on in-ground rather than in-wall. However, if the pipe is run in the ground it should not be covered with only sand. First the pipe needs to be insulated with a moisture proof insulation. This can be either a fit-to-pipe style or a granular insulation loose poured into the trench. After the insulation is installed (above and below the pipe) you would place sand, then a warning board, then indigenous soil to fill the trench completely, compacted in 6-inch layers. The purpose of the warning board is to stop a shovel or other "instrument of destruction" from contacting/breaking the pipe in the future.
Two final comments. (1) Since the pipe will be mucher warmer than the surrounding soil the plumber must include expansion fittings in the piping design. Don't attempt to use expansion loops underground, the movement will occur somewhere you don't want it, not in the loop. (2) There must be dielectric compatibility between the piping material and the soil. Has anyone tested the pH of the soil? Don't use metal pipe underground without compensating for any dielectric difference. Plastic pipe doesn't have this problem but is weaker and has a reduced inside diameter, meaning a larger size must be used for the same flow rate.
