Well, not really *the answer* ... but to quote the upcoming article, "If you aren't confused, you haven't been paying attention." I've got probably 6 pages on the subject, but it will be little more than an outline! Anyway, to answer the question, there is a band of viscosities that satisfy the requirements for SAE 10 oil. Ditto for SAE 20, and SAE 30. Ooops, what about the "W"? That's a different measurement, taken at subzero temperatures, and has a lot to do with whether the engine will be able to start. But I digress.
SO technically, your 10W30, starting at low temperatures, will stay a 10 weight oil until it crosses a threshold and becomes a 20 weight, then a 30 weight. BUT WAIT, this viscosity has been measured at low shear rates. Pump your 150C, 30 weight conventional (non-syntheitc) multigrade oil into a fast moving bearing, and it's back to a 10 weight!
