Shuddering is not how I remember the fuel cutout/overboost on my 88 900T. It was more like hitting a wall, all of a sudden all power was gone, then it would come back, almost like hitting the rev limiter.

We need a little more information, is this car stock? Does it have a different APC? Other modifications? IIRC you shouldn't be seeing boost past the red on a stock 900, even with the "red box".

What's the base boost set at? If the wastegate/baseboost is adjusted too high even when the APC attempts to lower boost it will be unable to. But that should then lead you to overboost and fuel cut out.

How is the ignition system? What are the plugs looking like? Are the wires new/recent or original?

I'm far from an expert but I hope that I've pointed you toward the right direction, I'm sure others will be able to provide better ideas as well.
