As far as I know the fuel system won't support that much boost without some modifications. Try unplugging the electrical connection from the BPC valve (3 hoses connected on top of the radiator) and see where the boost goes. This should give you continuous base boost mode, you shouldn't get past the middle of the yellow on your gauge.
But in a bone stock car you shouldn't be past the red. On my 88 900T with a self tweaked "red box" apc I barely got into the red/made it to the edge between yellow and red.
If your base boost is high that could explain why boost levels are so high. Even with 91 octane your ecu/zpc should adjust if knock is detected.
I would avoid WOT until you have this sorted, you don't want to be doing more angine replacements if you can avoid it.
