a bad cat will often have the same temp as the rest of the exhaust system if you run your hand under the pipe & cat with your hand about an inch away you will be able to feel the diference or not worse case I pull it off &look thru it I recently did this on my car while diagnosing a high RPM missfire
also kick the bottom of the cat & shake your muffler if either rattle your cat has or is going to unload into the mufler
your high nox can be fixed usually by turning the screw in the AMM CW a turn or2 but also may be a bad AMM but probably not the o2
unpluging the o2 wont tell you anything you use a DMM to test an o2 sensor
Id bet if you put o2 sensor test into the search you would get clear instructions
