This is not a criticizm of any of the work you are doing but there is a fundamental difference in how the throttle is controlled in T-5 vs T-7 cars.
The ECU controls the throttle in T-7 cars, the pedal potentiometer is the major contributor in the steady state but not in the transient stages, ie while opening and closing.. True you can modify the throttle position maps so that it "stays wide open" as you have said.
However the differences you feel when driving T-7 cars is "how" the throttle body opens and closes in response to inputs from the sensors in the system. These transient characteristics are probably not part of the throttle maping but imbeded in an underlying code much like the TWICE system (I think that is the acronym for the security in the t-7 cars) has its fingers in many other systems that have nothing to do with security.
One might look at the readings from the pedal potentiometer and the throttle position potentiometer in real time during transient conditions, both while opening and closing. a data logger with fairly rapid sampling would be necessary to study this activity, and create the graph.
