Following on MTAERO's point about even, orderly exhaust flow, I found the following interesting link about exhaust flow on a turbo car. Basically, there seems to be a school of thought out there that says introducing a slight, appropriate restriction at a point in the system when the gases are cooling (and thus taking up less volume and slowing down), can better speed up and organize exhaust flow, and actually lead to better overall flow. Going from a 3" downpipe to a 2.5" cat back (as tested by Nick) might be an example of this type of system.
I guess the theory is that a bunch of cooling exhaust gases that are "standing around" and moving slowly in a 3" system can introduce turbulence that actually restricts flow, similar to crimps in the bends of the pipes.
I'm no expert, but it does seem that comparisons to flowing water or blowing through a straw versus a hose aren't quite apples to apples comparisons here. Water doesn't expand and contract like an exhaust gas, and blowing through a straw doesn't involve the change in temperature of an exhaust system.
