Unfortunately, there is no "correct" EGT number... every car (hell, every engine) is gonna be different in terms of what to expect and what it can safely handle. That said, peak engine power occurs very close to peak EGT (usually, slightless colder than peak), so with some dyno time, you can tweak your setup and correlate peak output with the "correct" EGT. Once you know that number, you can quickly see with an EGT gauge whether your engine is doing what it should, or grenading itself... :)
I'd say the same largely true of an A:F gauge. Again, peak output comes very close to stoich, but the exact number is going to vary slightly from engine to engine. With A:F and some dyno time, you can see where your particular setup is happiest, and going forward monitor A:F to make sure everything is behaving.
Bottom line: You don't know what the optimum EGT or A:F values are without a dyno... Sans actual dyno time, anything these gauges return is going to be mostly useless information. But, once you know what proper values are for a state of optimum tune, this information together is an excellent way to track engine performance without relying on the butt dyno...
