With your slight mods, I'd guess about 190 (stock is 175) (long)

Free-er flowing exhaust should add some horsepower, though it is not necessary at this stage of the game for you. You are running a basically stock fuel system. If you started adding more boost and mroe fuel, then you need to go with higher flow exhaust. High flow exhaust requires some extensive modifications sometimes, including moving your battery to the trunk of the car. I am trying to get 3" exhaust on my car without moving the battery. I have a custom shop working on it, and it is going to cost over $700.
If you want more power, I suggest modifying your boost pressure control solenoid (I'll have the DIY web site for that up VERY soon, I promise). I would also suggest you get a 3.0 bar Fuel Pressure Regulator.
Consider this as well: The more speed you allow your car to generate, the more you will need to keep it on the road. I have added stainless steel brake lines, 16" rims with super sticky Yokohamas, drilled rotors, super blue brake fluid, and Bilstein shocks are on the way. My car is an SPG, so it is lower, too. For a convertible, I'd be EXTRA cautious about adding handling improvements before more speed.
