I would imagine that playing around with your wastegate rod length (hmmm....out of context that could be considered almost pornographic) will give you back at least some if not all of what you've been missing. Your mechanic sounds pretty good, and also conservative. If I was him I would be doing the exact same thing, setting it up bone stock. Sure enough, as soon as it blows, most people would be back at his door screaming "dadgummit you did exactly what I told you to!"
Search the bulletin board for more in depth info on adjusting your wastegate rod length to adjust boost. Seems like the most likely place to look since that's where the last major poking around was done, unless you're not telling us something :)
