Hi Chad,
I have roughly the same basic setup as you and mine has the same boost behavior. It's the way it is - peak followed by taper. If you look at the graph on the site the red box curve follows this. If you can run some high octane fuel it will help - the red box is only really designed to run effectivley on 98ron fuel. When I put this in mine it holds into the red much longer before it gets kicked back by heatsoaking of the IC and cylinder - as you say check if its detecting knock with an LED. I have also run with a bit more max retard (10deg btdc) but it didn't seem to make much power even though the boost was slightly more steady - I'm now at 11deg. There is a tweak mentioned on the site to disable the taper ( the F control pot) but I reckon it would make the boost too aggressive unless you like rebuilding gearboxes!
