A torque curve is pretty much just a graph of torque versus engine RPM. Optimally, the torque curve would go up very quickly and then level off, so you would have maximum torque available at virtually all engine speeds. Most Japanese cars with small engines have gradually sloping torque curves, meaning that they have very little low RPM torque, and don't generate maximum torque until they get close to the red line. Honda is fond of high RPM horsepower, which comes at the expense of low RPM torque, but low RPM torque gets the car off the line quicker. Turbocharged engines have very little torque until they hit 2000-3000 RPM, but then almost all of the torque is available from there on up. That's a big reason why a 1995 900 turbo with 185 hp will outrun a 2001 Acura RSX with 200 hp, while never sounding like the engine is about to blow up.
