i'm kind of new at this as well. from the sound of it, for normal driving conditions, it would seem to be right. however, at wot, with the ecu going to closed loop and ignoring the o2 sensor input (and from what kevin k states, ignoring amm input as well), you are totally reliant on the preset fuel curves. therefore changes in airflow through the engine (i.e. porting, turbo, cams, etc.) would make a difference in the required fuel and timing curves. at normal driving though, the amm measures air flow/volume and the o2 sensor fine tunes.
another limitation of the stock system is the fact that timing is controlled by the dist. diaphram. i have seen a big difference in the smoothness of acceleration with the use of the msd btm and the ability to more accurately control the timing curves. the ecu doesn't control this and don't think a chip could be made to help. other systems (di/apc i believe) have this ability. i've just bailed on the stock setup so my thoughts about working with it are biased. :)
