It seems to me that you are just experiencing the complications of a very aggressive APC box combined with that little-bitty Mitsu turbo. Sure it has great boost response (as you say, boosts instantly to 20+) but it is waaay out of its efficient operating parameters, which means that you are pumping nothing but heat into the motor. This alone could cause det. and cause the APC to yank back the boost.
The injectors and FPR sound like good fuel delivery hardware, but it is difficult/impossible to tell if it is actually tuned in correctly without a nice dyno run with the wideband O2 sensor plot. I'm not a fan of the bouncing LED air/fuel gages.
You didn't list any work on the motor to make if flow better - sure you can "pump up" the intake with the turbo, but the cylinder head can't process the air that fast...or the Mitsu turbine housing doesn't flow enough...or the exhaust system doesn't flow enough. I'm sure that there is a "cork" somewhere that you can remove. I would say minimum 2.5" mandrel bent exhaust w/ stock turbo downpipe, new "high flow" cat w/ 2.5 in/out, port the head and/or install SD cams, etc. When you do you will see smoother boost with lower peak pressure, and more power everywhere.
