I agree with Larry, shaving the head two or more mm to achieve your CR of around 11:1 is not the way to go.
You get a good starting point, by watching what the swedish "folkrace" guys are doing. In folkrace, Saab 99 2.0L is one of the most popular cars. The rules dictate that after each race, anyone can buy your racecar for around 500 USD. The trick therefore becomes: How do I get the most hp for the least $$? The engine recipe most Saab folkracers follow is:
Bore it to 94mm, increasing the volume to 2165cc.
Shave 2.0-2.5mm off the cylinder block to achieve a CR around 12:1
Install harder valve springs and a high lift performance cam.
Install a dual Stromberg 150 carb setup from a 99/900 GLS (Euro version).
These four steps give you around 170 hp @ 7000 rpm on a B201 engine.
In your case, you can safely shave off 0.33mm or 0.013" from the 2.1L head, which is exactly what you need, to maintain your current CR, while enjoying the bigger runners and ports on the 2.1L head/inlet manifold.
