I'm looking at a set of T-7 and T-5 heads now on my bench. There is no dought at all that the T-7 heads will flow much better. The thinner valve stems really open up the pathway. I don't think you could port the T-5 head to flow as good as stock T-7 heads. The cams on the other hand are another story. The duration of the T-7 cams are considerably less than their predessors and the engines still flow as much or more air at the higher rpms.
I will have a set of T-7 heads with better cams on my 9000 Aero shortly. The intake manifold needs some modification but everything else is pretty much the same.
