The panels ARE pop-out. They just aren't that easy to 'pop' out. They are attached (on my '92) with a very hard scotch-lock that just required a swift pull from the right area. There are I think three of them. You should be able to feel around as you pull up on it to find out where they are. Make sure you pull as close to each as possible so you don't break it.
As far as what I've done with my stereo: I put in two I think 6.5' midrange in the existing spots (had to cut the hole bigger), put in separate tweeters there as well by cutting another small hole. I then re-carpeted the grills entirely so you couldn't see the speakers behind them. I did perforate the backing on the carpet to improve the tweeter pass-through. For bass, I installed two 8-inch subs BEHIND the back seat. I first reinforced the sheet metal by adding a think piece of wood to the entire section and securing it well. I then drilled two 8-inch holes through the wood and into the sheet metal, and set the speakers INTO the canal behind the back seat, so they were firing UP at the back of the back seat.
The system is completely hidden and ads LOTS and LOTS of bass and just sounds great. (I added separates to the front, active crossovers, and lots of amplifiers under the storage compartment in the trunk).
